The torrential downpour warranted comfort food, and the aroma of split pea with smoked turkey neck emanating from Simma Soupery and Bakery seemed the obvious answer. Indeed, the Dean Kirkland-helmed establishment was more than prepared to respond to the seemingly ravenous patrons — Thursday Food definitely in the mix — as they served cups of soup, prepped sandwiches, salads and sweets. All in a day's work, we soon learn, rain or shine, for the restaurant/bakery located on Old Hope Road inside what many still reference as Welcome Plaza.

What's in demand this afternoon are red peas, chicken, pepper pot, veggie corn and split pea with smoked turkey neck soups. Equally in demand are the Quinoa & Black Bean or Mediterranean salads and a variety of breads with Monterey Jack or Swiss toppings.

Keeping abreast of trends and giving patrons even more reasons to frequent the establishment, the soupery and bakery recently introduced a new line of dishes: their casserole One Pots — dishes that hold servings, a quarter of a pound in size, and range from Callaloo Mac & Cheese: a creamy blend of cheeses with callaloo; Chicken Pot-Wah Pie: chicken cooked in coconut and curry, served with veggies and topped with buttermilk biscuits; Shepherd's Pie, which fuses beef and mixed veggies in a savoury gravy topped with mashed potatoes; and Baked Ziti, mixed pennes in tomato meat sauce, topped with cheese.

It's the company's new lunch/dinner options, Kirkland explained.

“By introducing these new dishes we expanded our lunch/dinner selections, which should also increase our consumer base,” he added.

There are, too, more baked options like cinnabun, carrot cake and chocolate chip as well as their most prized pistachio-cran cookies that sit on their lonesome atop the pastry display.

“You need to come out and try them and our soup and all of our other lovely complements; it's all home-made, no additives, very delicious and healthy,” Kirkland said.

Expansion is on Kirkland's vision board for 2018, but for now it's about satiating appetites with his One Pot casseroles, soups, sandwiches and sweet treats.
